Grilled Turkey with Tomato salad

Ingredients:

• Turkey breasts with skin on (one per person)
• 2 avocados, chopped into chunks
• 4 large tomatoes
• 1 large corn on the cob
• 3 tbsp olive oil
• 3 tbsp fresh lemon juice
• 1 tbsp ground cumin
• Olive oil
• Salt
• Pepper

Preparation:

1)Grab a bowl and add the olive oil, lemon juice, cumin, salt and pepper then whisk together. If you’ve got a mason jar you could always put the ingredients in there and shake to combine. 2)Put the turkey into a Ziplock bag along with the marinade and squish it so the turkey is completely covered. Leave this out at room temperature for the turkey to absorb the flavours, this could take about an hour. 3)Pop your griddle pan on the hob and crank up the heat to high. Drizzle olive oil into the pan or use a spray of your choice to make sure the chicken doesn’t stick. Gently lay the turkey breasts into the pan and cook on both sides for five minutes each until it is completely cooked through. 4)To serve, slice the turkey and surround with the chopped veggies and dressing of your choice.
