Spiced Halloumi, radish and apple salad

Ingredients:

• 3 Del Monte apples, cored and sliced thinly
• 225g halloumi cheese
• 300g radish, thinly sliced
• 1 large orange pepper, cut into small chunks
• 1 head of baby gem lettuce
• For the dressing:
• 1 juice of a lemon
• 1 tbsp wholegrain mustard
• 3 tbsp honey
• 3 tbsp olive oil
• 1 tbsp cider vinegar
• 1 tsp balsamic vinegar

Preparation:

1)Take all the elements you need to make the dressing and whisk them together vigorously so they combine. Pour some into a separate jug which you can then serve on the side as extra dressing. 2)Slice the apples, radishes and the pepper and drizzle over the other half of the dressing, this will stop the apples from browning and will make it taste super fresh! 3)Tear the lettuce head and start adding to the plates as you’ll want to serve quickly once the halloumi is ready. 4)Cut the halloumi into strips about 1.5cm thick and pop a griddle pan on a medium heat. Splash a touch of oil or spray into the pan and once it’s warmed through, lay the strips of halloumi onto the pan, frying for a couple of minutes each side. 5)The best thing about halloumi is that it doesn’t melt, it crisps up. So, once you start to see it crisping up you’ll know it’s almost ready. Remove from the heat and lay onto the torn lettuce before spooning the dressing and fruit mix onto the plate too. Don’t forget you’ve got the extra dressing for drizzling and you can always add seeds or nuts on top for an extra mineral boost.
