Banana and Date Muffins
5 minutes preparation - 25 minutes cooking
Preheat the oven to at 200°C/400°F/Gas Mark 6 and line a muffin tin with paper cases.
Measure all the ingredients into a bowl and beat well. Distribute evenly among the paper cases and bake in the oven for 20 to 25 minutes.
Allow to cool in the tin for five minutes, then remove and cool completely on a wire rack. Dust with icing sugar before serving.
- 240g self-raising flour
- 1 tsp baking powder
- 120g light muscovado sugar (Fine brown sugar)
- 60g stoned dates, chopped
- 3 ripe Del Monte® bananas, mashed
- 1 egg
- 175ml milk
- 4 tbsp sunflower oil
- Icing sugar, to dust
