Carrot Salad with Orange Juice Dressing
5 minutes preparation
Mix together the carrots, almonds and pumpkin seeds in a bowl.
Put the orange zest, Del Monte® Orange Juice, mustard, olive oil and balsamic vinegar into a clean jar or bottle. Screw the lid on tight and shake vigorously.
Combine the dressing with the carrot mixture and serve immediately.
- 2 large carrots, grated
- 1 tbsp flaked almonds
- 3 tbsp pumpkin seeds
- ½ Del Monte® orange, zest only
- 100ml Del Monte® Orange Juice
- ½ tsp Dijon mustard
- 1 tbsp olive oil
- ½ tsp balsamic vinegar
