Feta and Pomegranate Salad with Orange Vinaigrette
Mix all ingredients to the orange vinaigrette, and marinate feta in approximately 3 hours.
Toast the almond flakes lightly in a dry skillet over low heat.
Mix arugula, spinach and chard in a large bowl, mix the marinated feta.
Sprinkle the pomegranate and roasted almond.
Pour extra orange vinaigrette and serve in a bowl alongside.
- 300g feta cheese in pieces
- 110g almond flakes
- 4 hands mixed arugula, spinach and mango leafs
- 2 pomegranates
- 50ml Del Monte® 100% Orange Juice
- 2tsp Grey Poupon dijon senap
- 30ml raspberry vinaigrette
- ¼ thyme
- 50ml olive oil
- Salt and Pepper
