Feta and Pomegranate Salad with Orange Vinaigrette

step1Mix all ingredients to the orange vinaigrette, and marinate feta in approximately 3 hours.

step2Toast the almond flakes lightly in a dry skillet over low heat.

step3Mix arugula, spinach and chard in a large bowl, mix the marinated feta.

step4Sprinkle the pomegranate and roasted almond.

step5Pour extra orange vinaigrette and serve in a bowl alongside.



  • 300g feta cheese in pieces
  • 110g almond flakes
  • 4 hands mixed arugula, spinach and mango leafs
  • 2 pomegranates
  • 50ml Del Monte┬« 100% Orange Juice
  • 2tsp Grey Poupon dijon senap
  • 30ml raspberry vinaigrette
  • ┬╝ thyme
  • 50ml olive oil
  • Salt and Pepper
