Thai Banana and Chilli Salad
10 minutes preparation
Whisk together all of the dressing ingredients in a bowl and make sure they are fully combined.
Put the salad ingredients in a serving bowl and pour over the dressing.
Toss well and serve immediately.
- 2 red chillies, finely sliced
- 1 tsp fresh ginger, grated
- 1 tbsp fish sauce
- 2 tbsp Del Monte® lime juice
- 1 tbsp brown sugar
- 60ml semi-skimmed milk
- 1 tsp coconut essence
- 3 Del Monte® bananas, sliced into rounds
- 200g baby gem lettuce
- 1 Del Monte® cucumber, sliced
- 4 fresh mint leaves, chopped
- ½ bunch of fresh coriander leaves chopped
- 40g cashew nuts, unsalted
