• 400g of pineapple chunks
• Juice of 2 or 3 limes
• Half cucumber
• 12 sprigs of mint
• Piece of fresh ginger (4g)
• Glass of ice cubes
• Glass of water (200ml)
1)Cut off both ends of the pineapple and then remove the skin from the whole pineapple, trying to remove all the "little eyes". 2)Using a sharp knife, cut the pineapple into slices. For each slice, remove the core (centre of the pineapple which is not pleasant to eat). Roughly cut the slices into cubes and pour into the blender. 3) Wash the cucumber and add half to the blender. 4)Add the lime juice to the mixture. 5) Wash the sprigs of mint and add them to the blender. Remove the skin from the ginger and grate it into the blender. 6)Add the ice cubes and water and blend for 2 minutes. 7)Presentation: serve the cocktail in a glass and decorate with a few sprigs of mint and a triangle of pineapple and ENJOY!

This is a bit of a showstopper, but you can easily halve the quantities (except for the fruit salad) and just make one cake if you'd prefer to serve fewer people.
What you will need: 2 X 20cm square, lined cake tins; candymaker's thermometer. If using round tins, you will need 2 x 22/23cm (9") tin.
