Chicken and Pineapple Curry

Ingredients:

• 435g Del Monte® Pineapple Chunks in Juice
• 5-6 boneless and skinless chicken breasts, cubed
• 1 onion, finely diced
• 2 tsp minced garlic
• 1 tsp ground ginger
• 2 tbsp curry powder
• ½ tsp ground cardamom
• ½ tsp ground coriander
• ½ tsp salt
• ¼ tsp black pepper
• 1 fresh red chilli, finely diced
• 400ml Del Monte coconut milk

Preparation:

1)In a medium-sized pot over medium heat, add the olive oil, onion and garlic. Sauté until onion is soft and garlic is fragrant. Add the ginger, curry powder, cardamom, coriander, salt, pepper and chilli. Sauté for 1-2 minutes. 2)Drain the Del Monte® Pineapple Chunks in Juice and add to the coconut milk and chicken breasts. Bring coconut milk to a simmer and cook for 15-20 minutes, or until chicken is cooked through. 3)Serve with natural yoghurt, mango chutney, coriander, pilau rice, garlic naan bread and sides of your choice.
